Lentils: Low-Fat, High-Fiber Folate for Healthy Eating
Last year I took a trip to Mexico and I ate lentils for the first time in all of my thirty-two years, I loved them! When I came back home I began looking for recipes, I discovered that vegetarians utilize these tiny beans and that lentils are a good addition to living a healthy, well-balanced lifestyle.
A healthy … well-balanced lifestyle! Considering the fact that up until a couple of month's ago my idea of a really good dinner was a box of pizza dough, some spaghetti sauce, a cup of mozzarella and some deli pepperoni, I'm not doing so bad jumping on the healthy food trolley.
The lentils I sampled in Mexico were green but there are so many colors, so many ways to cook lentils some ways based on the very color of the lentil itself but the possible combinations to actually use lentils in a family's diet is practically endless.

The Role of a High Fiber Diet for Weight Control
Have you been told you need to eat more fiber? In general, this is good advice. Most Americans fall far short of the recommended twenty-five to thirty grams of daily fiber needed for good health. Studies have shown that a high fiber diet can reduce the risk of heart disease, diabetes, and even certain types of cancer. But, what if you're trying to lose weight? Is fiber good for weight loss?The overwhelming evidence suggests that fiber for weight control is a positive. Adding fiber to the diet helps with weight loss in several ways. Diets high in fiber help to stabilize blood sugar and insulin levels after a large meal which may help to offset fat storage. In addition, fiber moves slowly through the digestive tract, creating a greater sense of fullness so that hunger is kept at bay. People who eat a high fiber diet, generally consume fewer overall calories during the day relative to those who eat a standard, low-fat one. In addition, foods that are high in fiber, particularly fruits and vegetables are generally lower in calories than their low fiber counterparts.
One study showed that dieters who added fourteen grams of fiber to their diet took in ten percent fewer calories overall. It's easy to see how consuming ten percent fewer calories a day could result in significant weight loss over time. Another study showed that overweight men and women lost more weight on a low-fat, high fiber diet than those who ate a low-fat, low fiber diet. Another bonus? They also reduced their risk of type 2 diabetes.

If you like bread but don't like the carbs I have a nice bread machine recipe for you. It is OK to eat carbs as long as you balance them out with protein and plenty of fiber. This bread recipe is packed with fiber. It is not a fluffly light break it is a thick filling heavy bread, so you will get through your bread cravings, but I guarantee you won't be able to eat a lot of this bread.
Your bread machine will need to have at least a 10 cup capacity to make this bread.

There has been significant evidence (in the scientific literature) that foods, and especially plant-derived foods (fruits and vegetables), contain cancer fighting compounds. A 1997 publication on Food and Cancer established that high vegetables /fruit diets probably decreases Breast Cancer and High Diet Fiber: Are More Fruits and Vegetables Helpful?Date: July 20, 2007breast cancer risk and, on the contrary, high total fat diets possibly increases cancer risk. The information on Breast cancer and the relationship with diet is somehow confusing and mixed on the positive effects of high fiber diets.
The study's (see reference bellow for original paper) purpose was to evaluate if an increase in the consumption of vegetables, fruits, and fiber, and a decrease in fat has an effect on the risk of recurrent and new breast cancer development. Also, it examined if such high-fiber/limited fat intake may have an effect on the all-cause mortality rate among women with previously treated early stage breast cancer.

People have to follow a high fiber diet for a number of reasons. For me, I've been seeing a gastroenterologist for several months to determine the root cause of my anemia. Along the way, I've had a number of invasive tests, but we still don't know why I'm anemic. After my colonoscopy, though, the doctor did discover a tiny hyperplastic polyp and both internal and external hemorrhoids . His prescription: a high fiber diet.The problem for me: I dislike most vegetables, which comprise most of the better sources of fiber.
